Recipe of the month
Our recipe of the month is recommended by our dietitians using Diabetes Australia’s own recipe guidelines. These recipes are not only suitable for people with diabetes but can be enjoyed by all people.
Symple Fruit Loaf (Book 1)
Makes 10 slices

¼ cup sugar
1 cup mixed fruit
1 cup skim milk
1 cup unprocessed bran
1 cup self-raising flour
½ teaspoon vanilla essence
cooking spray
Preheat oven 180ºC fan forced. Mix all ingredients together in large mixing bowl. Pour into a small loaf tin that has been coated with cooking spray. Bake 30-35 minutes or until cake springs back when lightly pressed in centre.
Variations: Replace mixed fruit with 1 cup (120g) fruit medley or replace mixed fruit with sultanas.
