Treat yourself to the refreshing and tangy delight of Lemon Raspberry Bark! This easy-to-make dessert combines creamy Greek yogurt with the sweetness of honey and the zesty kick of lemon. Topped with juicy raspberries and a burst of lemon zest, it's a cool, guilt-free treat that's perfect for any occasion. Simply freeze and slice for a light and satisfying snack that’s bursting with flavor.

Ingredients

  • 3 cups (780g) Greek Yoghurt
  • 2 tbsp. (40g) honey
  • 1 lemon, zest and 1 tbsp. (20ml) lemon juice
  • 1 punnet (125g) fresh raspberries

Method

1. Line a rectangular 30 x 20cm baking tray with baking paper.
2. In a bowl mix together yoghurt, honey and lemon juice.
3. Pour the mixture across the prepared tray.
4. Dot with raspberries and lemon zest.
5. Freeze for at least 4 hours or until hardened.
6. Slice to enjoy.
