Start your day right with these delicious and nutritious Breakfast Wraps! Fluffy scrambled eggs are combined with savory semi-dried tomatoes and fresh spinach, creating a perfect filling for soft, warm wholegrain tortillas. Quick to prepare and packed with flavor, these wraps are a satisfying and healthy breakfast option that will keep you energized all morning!

Ingredients

  • 4 eggs (51g each)
  • ½ cup (70g) semi-dried tomatoes, chopped
  • 3 cups (120g) English spinach
  • 4 wholegrain tortillas (40g each

Method

1. In a large bowl whisk the eggs, add the semi-dried tomatoes and spinach and season with cracked pepper.
2. Heat a non-stick frying pan to medium, add egg mix and stir well, ‘scrambling’ until completely cooked.
3. Meanwhile, heat a grill pan to moderate heat. Cook each tortilla, turning once until warm and soft.
4. Divide the egg mixture between the tortillas, roll up to enclose completely.
