Crustless Quiche

This Crustless Quiche is a light, healthy, and delicious option for any meal of the day! Made with a creamy ricotta and egg base, it’s packed with nutritious spinach and caramelized onions for added flavor. With no crust, it’s low in carbs but full of taste, making it the perfect dish for breakfast, lunch, or dinner. Easy to prepare and bake, it’s a satisfying meal the whole family will love!

Ingredients

  • 6 large eggs (51g each), beaten
  • 300g frozen spinach, (squeeze out excess liquid)
  • 250g ricotta, reduced-fat
  • 1 onion (164g), peeled and chopped

Method

1. Preheat oven 180ºC. Line a 20cm quiche dish with baking paper.
2. In a large bowl, combine eggs and ricotta, set aside.
3. Sauté onions until golden.
4. Add spinach and season with sea salt and cracked pepper, cook for 2 minutes then cool.
5. Add to eggs and ricotta and mix to combine.
6. Pour into prepared dish and bake for 40 minutes.
7. Cool before slicing to serve.

NOTE: This quiche will rise but quickly fall.
