Yoghurt, chia & apple oat Bircher
Recipe
A creamy, spiced oat bowl that’s perfect for a nourishing breakfast or snack. Packed with natural Greek yoghurt, fresh apple, warming cinnamon and cardamom, and topped with crunchy nuts and a drizzle of honey, it’s a simple make-ahead dish that’s both satisfying and full of flavour.
Ingredients
- 1 and a ⅓ cups (375g) natural Greek yoghurt
- 1 cup (250ml) milk
- 1 tablespoon chia seeds
- 1½ cups (135g) rolled oats
- 2 medium red apples (300g)
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground cardamom
- ⅓ cup (45g) coarsely chopped roasted hazelnuts
- ¼ cup (40g) coarsely chopped roasted natural almonds
- 1 tablespoon honey
Method
- Combine 1 cup of the yoghurt, the milk, chia seeds and oats in a medium bowl. Stand for 15 minutes.
- Meanwhile, coarsely grate 1½ apples. Add grated apple and spices to oat mixture; stir to mix well. Cut remaining apple into eight thin wedges.
- Divide oat mixture evenly among four bowls; top with remaining yoghurt and apple. Sprinkle with chopped nuts and drizzle with honey to serve.
TIPS
- Swap nutmeg for cinnamon, if you like.
- This is a great option for breakfast on the go. You can prepare in advance and portion out into lunchboxes to have ready during the week.
